One Pot Cheesy Bison Pasta
I know it's been TOO long since I've added a new recipe! I think this one will be worth the wait! I don't know about you but I'm always happy to find a recipe that uses minimal dishes... this recipe is just that, ONE POT! And maybe a knife and a cheese grater... unless of course you buy pre shredded cheese ;)
This one will cure your comfort food cravings, make you feel good when it's chilly out and be an easy one to throw together as we start getting into that Fall schedule again. I joined a couple of my favorite "one pot" dishes plus added my own flare... Check it out below!
Ingredients:
1lb ground bison
1 small white or yellow onion, diced (about 1 cup)
1 tsp salt
1 tsp pepper
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp cumin
2 Tbsp tomato paste
2 Tbsp whole-grain mustard
3 cups raw pasta (spiral, elbow, fusilli, bow tie, etc.)
2 cups whole milk
2 cups water or bone broth
2 cups shredded cheese (smoked gouda and aged cheddar are my reccommendations)
1/4 cup cream cheese, cut into small cubes
Green onions for topping
Method:
Brown the ground bison and diced onion in a heavy pot. Add all six spices, stirring and cooking for 2-3 minutes. Add mustard and tomato paste. Add pasta, milk and water or bone broth. Bring to a boil and simmer until pasta is tender. Add cheeses and stir until melted. Serve with sliced green onion. Enjoy!
