HEARTY BISON HAMBURGER SOUP
Hearty Bison Hamburger Soup
Servings: 4
Time needed: 30-40 minutes
- 1lb ground bison
- ½ cup chopped onion
- 1 tsp salt (more as necessary)
- Minced garlic
- ½ tsp ground pepper
- 1 Tbsp fresh chopped parsley
- 1 cup shredded cabbage
- ½ cup peas
- 1 cup diced potatoes
- ½ cup diced carrots
- 1-28oz can diced tomatoes with juices
- 4 cups bison broth
Method:
1. Brown ground bison in large pot with onion, garlic, salt and pepper until no longer pink.
2. Add all veggies except tomatoes and sauté for 3 minutes.
3. Add tomatoes and bison broth. Bring to a boil and let simmer for 20 mins or until veggies are tender. Serve with garlic bread and a dollop of sour cream.
*TIP: Make a double batch to freeze!*
